Red blood spot (RBS) commonly found in cooked chicken breast has caused severe economic loss as it is perceived as a sign of undercooked product. The objectives of this study were to investigate the cause of RBS as related to common ingredients used in marination, based on both chicken breast and isolated chicken hemoglobin (Hb) models. The effect of sodium chloride (NaCl), sodium tripolyphosphate (STPP), and glucose on thermal denaturation of Hb was investigated along with the extent of RBS formation in cooked marinated chicken breast. After vacuum tumbling for 65 min and subsequent storage at 4 °C for 20 hr, STPP and glucose were not absorbed into the center of chicken breast. However, Na+ was absorbed after 12 hr storage. The denaturation temperature (Td) of isolated chicken Hb decreased to 65.8 °C in the presence of 1.5 M NaCl, while that of the control was 69.4 °C. STPP at pH 9 decreased Td of Hb to 61.4 °C. The alkaline pH induced by STPP destabilized the Hb structure. RBSs were observed at 100% incidence when cooked to core temperatures of 50 and 70 °C for 1 min. RBSs were completely eliminated at core temperature of 85 °C. The ingredients used during marination appeared to have a minimal effect on RBS formation due to their limited absorption into the chicken breast. 针对反射面成型的复杂影响因素,提出平面桁架构建的定日镜面形支撑结构优化技术路线. 利用模拟仿真、数值计算和优化算法等方法,解析20 m2定日镜面形定义技术路线的4个组成环节:面形规格及宽高比、上弦杆的截面矩、平面桁架组间距的最优值、机加工中工艺控制要点的量化. 试制小型定日镜进行实验,分析光斑形状和能流密度分布特性,并与理想球面形光斑比较,两者的拟合优度大于0.98. 实验结果表明,当反射镜宽高比取1.2,上弦杆截面矩取40 000 mm4,桁架组间距取950 mm,上弦杆和斜杆的开孔公差小于0.9 mm时,反射面形的质量提升. 研究从原理和实践上证明了该优化技术路线的可行性. 相似文献

通过Gleeble-3500热模拟机对钒(V)含量分别为0.06%和0.02%的X80管线钢进行了峰值温度为1350℃和750℃的焊接热模拟试验,利用硬度计和光学显微镜(OM)分别分析了焊接热模拟试样硬度和试样中马氏体-奥氏体岛状组织(M-A)的数量、尺寸和形貌。利用透射电镜(TEM)对母材、粗晶区和部分相变区中粒子析出进行了表征。结果表明,与0.02%含V量X80管线钢相比,0.06%含V量的X80管线钢由于V含量较高,在受到多道次焊接热循环影响时,部分相变区有较大量碳化钒(VC)粒子析出,明显阻碍位错运动,使其强度明显提高的同时脆性增大、塑性变形难以进行,导致其焊接热影响区韧性下降。 相似文献

In this study, AISI 2205 duplex stainless steel, most commonly used in its class and economical AISI 1020 steel couple with low carbon content, were connected using different operation parameters through friction welding. Tension test and rotary bending fatigue test were applied to the welded connections, and the impact of the welding parameters on fatigue strength was examined. It was discovered that when the welding parameters used in connecting AISI 2205 and AISI 1020 steel couple through friction welding were selected correctly, fatigue strength of the connection would increase compared to the main material, and incompliant parameters decreased fatigue strength. 相似文献

An overlapping composite track coating was produced on a steel surface by preplacing a 0·5 mm thick layer of TiC powder and then melting using a tungsten inert gas torch of constant energy input. The influence of the overlapping operation on preheating of the substrate, the dissolution of TiC particulates and the subsequent depth and hardness of the composite layer was analysed. The melt microstructure consisted of both undissolved and partially dissolved TiC particulates, together with a variety of morphologies and sizes of TiC particles precipitated during solidification. Preheating, resulting from the overlapping operation, occurred, producing additional melting of the TiC particulates and deeper melt depths but with a reduced volume fraction of TiC precipitates in the subsequent tracks. A maximum hardness of over 800 HV was developed in the composite layer. The high hardness was unevenly distributed in tracks melted at the initial and final stages, while it varied across the melt depths in other tracks. 相似文献

Eulerian two-fluid model coupled with wall boiling model was employed to calculate the three dimensional flow field and heat transfer characteristics in a hot channel with vaned spacer grid in PWR. The heat transfer from pellet-gap-cladding to coolant was also taken into account by a system coupled code MpCCI. The wall boiling model utilized in this study was validated by Bartolomei experiment data, and a good agreement can be observed. By solving the governing equation in a two-way coupled method, the distribution of temperature in the pellet-gap-cladding region and the distribution of temperature, void fraction and velocity of two-phase flow in coolant channel can be obtained. The influences of spacer grid and mixing vane on the thermal-hydraulic characteristics were analyzed. The heat transfer capacity was strongly improved by the spacer grid and mixing vane, while the flow resistance was also enlarged. Localized volume fraction of vapor phase decreased due to mixing vane, which will decrease the possibility of the departure from nucleate boiling (DNB) and increase the critical heat flux (CHF). By analyzing the temperature and void fraction at cladding outer surface, the critical regions where hot spot may occur were determined. 相似文献
